Celiac Disease starts with a gluten-free diet. These are the foods that contain gluten: wheat, barley, kamut, rye, triticale, and spelt. Other foods that should be avoided are matza, kasha, bulgur, and probably oats and hemp as well. While neither oats nor hemp actually contain gluten, cross-contamination may be an issue with these food items. Durum, semolina, farina, and graham flour are all types of wheat that should be avoided. Clearly, you would find gluten in baking products, pasta, crackers, etc. Other grocery items that may contain wheat include canned soups, frozen entrees, sausages, dry roasted nuts, and many, many more processed foods. The only way to tell for sure is to read the ingredient list on the label. Sometimes you may even need to call the manufacturer to clarify an item like
starch. Vitamins, cosmetics, and lotions may also contain gluten and should be screened.
Eating a healthy, balanced, gluten-free diet requires careful planning and attention to ingredients in everything you eat.
