Spinach Polenta with TomatoesIngredientsInstructions
Spinach Polenta
- Bring water, milk, and salt to a boil.
- Drizzle in cornmeal and cook and stir until thick
- Remove from heat and stir in cheese and spinach.
Tomatoes
- Saute the garlic in the olive oil just until fragrant.
- Add the salt, oregano, and balsamic vinegar and stir.
- Add the tomatoes, cut sides down, and cook 5 minutes, just until warmed through.
