Pecan Banana Coffee CakeIngredientsInstructions
- Preheat oven to 350, and grease and flour every nook and cranny of a bundt pan.
Pecans
- Mix all ingredients in a small bowl.
Cake
- Cream shortening and sugar until light and fluffy.
- Beat in eggs, mashed banana, and vanilla.
- Stir dry ingredients in a small bowl and add slowly to the mixer.
- Put half of the pecan mixture in the bottom of the pan and top with half the cake batter--repeat.
- Bake 45 minutes, until a toothpick comes out clean.
- Cool completely, then make icing.
Icing
- Melt butter in a medium sized pan (the icing will be made in this pan).
- Add sugar and milk, bring to a boil, and keep it there for one minute.
- Remove from heat and add vanilla.
- Beat in powdered sugar.
- Drizzle immediately over cake.
