Pecan Banana Coffee Cake

Ingredients

Cake
1/2 cup   shortening, the non trans fat kind!
1 cup   sugar
2   eggs
2   bananas, very ripe mashed
1 tbs   vanilla extract
1/2 cup   sour cream
2 cups   Gluten Free All Purpose Flour (Tom Sawyer)
1 tsp   baking powder
1 tsp   baking soda
1/4 tsp   salt
Caramel Icing
6 tbs   butter
1/4 cup   brown sugar, packed
6 tbs   milk - 2%
1 tsp   vanilla extract
2 cups   powdered sugar
Pecans
1/2 cup   pecans, chopped
1/4 cup   sugar
4 tsps   cinnamon

Instructions

  • Preheat oven to 350, and grease and flour every nook and cranny of a bundt pan.

Pecans

  • Mix all ingredients in a small bowl.

Cake

  • Cream shortening and sugar until light and fluffy.
  • Beat in eggs, mashed banana, and vanilla.
  • Stir dry ingredients in a small bowl and add slowly to the mixer.
  • Put half of the pecan mixture in the bottom of the pan and top with half the cake batter--repeat.
  • Bake 45 minutes, until a toothpick comes out clean.
  • Cool completely, then make icing.

Icing

  • Melt butter in a medium sized pan (the icing will be made in this pan).
  • Add sugar and milk, bring to a boil, and keep it there for one minute.
  • Remove from heat and add vanilla.
  • Beat in powdered sugar.
  • Drizzle immediately over cake.
