Sunday Morning Pancakes

Ingredients

2 tbs   butter - unsalted
3/4 cup   buttermilk
1/4 cup   milk - 2%, might not use it all
1   egg, separated
1 cup   all-purpose flour
2 tsps   sugar
1/2 tsp   salt
1/2 tsp   baking powder
1/4 tsp   baking soda

Instructions

  • Lightly grease and preheat griddle or large frying pan to medium high.
  • Melt the butter in the microwave and set aside to cool.
  • Put the buttermilk and 1/4 cup of milk in a glass measuring cup, and add the egg white to it, and mix well.
  • Stir the egg yolk into the butter, and combine well, then stir into the measuring cup. This helps suspend the fat throughout the pancake.
  • Combine all dry ingredients, and whisk to combine thoroughly.
  • Pour the wet ingredients into the dry, and whisk just until mixed. If mixture seems to stiff, add extra milk.
  • Ladle batter onto hot pan.
  • When the tops of the pancakes start to bubble (2-3 minutes), flip and cook 1-2 minutes more.
