Greek Orzo Salad

2   garlic cloves, mashed
1 tbs   fresh rosemary, chopped
1 tbs   fresh parsley, chopped
1 tbs   dried oregano, chopped
1/3 cup   white wine vinegar
1/2 cup   olive oil
10 ozs   orzo pasta
1/2 cup   red bell pepper
1/2 cup   green onion
1/2 cup   sun-dried tomatoes in oil
6 ozs   feta cheese
  • Mash garlic with the flat of a knife or a fork.
  • Chop herbs and mix with oil and garlic.
  • Cook orzo in well salted water, then drain and rinse to cool slightly.
  • Toss pasta with dressing.
  • Toss in vegetables and feta.
