Jalepeno Ham and White Bean Soup

Ingredients

1 tbs   olive oil
1 cup   onion, minced
1/2 lb   ham, lean smoked
4 ozs   canned jalapeno pepper, chopped
1   garlic clove, minced
32 ozs   canned cannellini beans, rinsed and drained
4 cups   water
3/4 tsp   salt
1/4 tsp   freshly ground black pepper
1/4 cup   fresh parsley, chopped

Instructions

  • Heat oil in pan over medium heat.
  • Add onion, ham, jalapeno and garlic. Saute 7 minutes or until onion is tender.
  • Add beans, water, salt and pepper.
  • Bring to a boil. Reduce heat.
  • Simmer, partially covered, 20 minutes.
  • If desired, place 2 cups of bean mixture in a blender. Process until smooth. Return puree to pan.
  • Stir in parsley.
