Corn, Black Bean and Red Pepper Salad

Ingredients

16 ozs   canned corn, drained
16 ozs   canned black beans, rinsed and drained
1   red bell pepper, diced
4 tbs   olive oil
2 tbs   white wine vinegar
1/2 tsp   ground cumin
1/4 cup   red onion, chopped
1/4 cup   fresh parsley, chopped, or cilantro

Instructions

  • Combine everything.
  • Best served at room temperature, but refrigerate if not serving the same day.
