- Cut the chicken into bite sized pieces and season with salt and pepper.
- Brown the chicken in olive oil, then set aside. Do this in batches if necessary, a crowded pan makes steam and slows browning.
- Add the onion and green pepper to the pan and cook until the onion is golden.
- Stir in the rice and let it get will coated with oil.
- Add everything else except peas and bring to a boil.
- Cook 15 minutes, then check the rice to see if it needs more water, cover and continue to cook until rice is tender and chicken is cooked through, about 10 more minutes.
- Stir in peas and let sit about 5 minutes, until warm.
