Tomato-Zucchini Casserole

Ingredients

1 tbs   olive oil
3   garlic cloves, minced
5   zucchini, sliced
1/4 tsp   dried oregano
1/4 tsp   dried basil
5   tomatoes, sliced
1/2 cup   seasoned breadcrumbs
2 tbs   butter, melted

Instructions

  • Preheat oven to 350.
  • Heat oil in skillet. Add garlic and zucchini. Saute just until zucchini starts to become limp.
  • Remove from heat and set aside.
  • Lightly grease a casserole dish, and alternate layrs of zucchini and tomatoes.
  • Combine basil, oregano, bread crumbs and butter and sprinkle over the top of the casserole.
  • Bake, uncovered, 30 minutes.
