Chicken with Creamy Herb Sauce

1 1/2 lbs
boneless skinless chicken thigh, flattened
1/2 cup
all-purpose flour
1/2 tsp
salt
1/2 tsp
garlic powder
1/4 tsp
pepper
1 tbs
butter
1 tbs
olive oil
1/2 cup
dry white wine
1 tbs
lemon juice
1/2 cup
whipping cream
1/2 tsp
dried thyme
2 tbs
fresh parsley, minced
1
lemon, sliced
1 tbs
capers


  • Mix flour with salt, garlic powder, and peper.
  • Dredge chicken with seasoned flour.
  • In a large skillet, heat butter and oil.
  • Add pieces of chicken without crowding.
  • Cook just until meat loses pinkness.
  • Place on hot platter and keep warm.
  • Add wine and lemon juice to skillet.
  • Simmer over moderately high heat, stirring to blend in browned particles.
  • Boil, reducing by 1/2.
  • Add whipping cream, thyme, and parsley.
  • Cook until sauce thickens slightly.
  • Pour any juices from warming platter into sauce.
  • Pour sauce over meat.
  • Top with parsley, lemon slices and capers.
