Real Caesar Salad

egg
3
garlic cloves
1
anchovy
1 tbs
dijon mustard
2 tbs
lemon juice
1/4 tsp
worcestershire sauce
3
romaine lettuce heads, chopped
1/4 cup
olive oil
8 tbs
parmesan cheese


  • Put the egg (still in its shell) in a bowl of hot tap water.
  • Mash the garlic in your salad bowl using either a pestle or bottom of a sturdy cup (one that won't shatter in your hand) until it's a paste and the sides and bottom of the bowl are well coated.
  • Now add the anchovy and mash it into oblivion.
  • Add the egg yollk and mix well.
  • Add mustard, lemon juice, and worcestershire.
  • You now have a pasty mixture.
  • Toss in the very dry lettuce, then toss in olive oil until well mixed.
  • Sprinkle with parmesan.
