Baked Sweet Potato Rounds

sweet potatoes
1 tbs
olive oil
1 tbs
butter


  • Preheat oven to 450.
  • Scrub the sweet potatoes well, then cut into 1/4" slices.
  • Lay out on a foil lined baking sheet or two - don't overlap and try not to let them touch.
  • Melt the butter in the olive oil then brush over the potaotes.
  • Bake 22 minutes, turning once.
  • Drain on paper towels, and salt while hot.
