Bok Choy with Mushrooms and Shallots

2 tsps
olive oil
8 ozs
mushrooms, sliced, any variety
2
shallots, minced
1 lb
bok choy, chopped white and green parts
2 tsps
soy sauce
1
garlic clove, minced
1 tsp
lemon peel, minced


  • Heat oil over medium-high heat. Add mushrooms and shallots and
  • cook 5 minutes, until mushrooms are golden.
  • Add the white part of bok choy and cook another minutes until tender.
  • Add the greens, and cook just until wilted.
  • Toss with soy sauce, garlic, and lemon peel.
