Parmesan Orzo Primavera

chicken broth
1 cup
orzo pasta
1/3 cup
water
1/2 cup
red bell pepper, chopped
1/2 cup
yellow bell pepper, chopped
1/2 cup
carrot, chopped
1 cup
broccoli flowerette
1/3 cup
parmesan cheese, grated
2
green onions, chopped


  • Combine chicken broth, water, and orzo in a medium sized pot and bring to a boil.
  • Reduce heat, cover, and simmer for 7 minutes.
  • Add vegetables, stir well, and cook another 5 minutes. They should be just tender.
  • Remove from heat, put in a large serving bowl, and sprinkle with cheese and green onions.
