Huevos Rancheros

15 ozs
canned mexican-style diced tomatoes
1/2 tsp
chili powder, more or less to taste
1 tbs
canned diced green chiles, more or less to taste
1/4 cup
water

eggs
1/4 tsp
freshly ground black pepper
1/4 cup
butter, melted
4
flour tortillas, quartered


  • Preheat oven to 400 degrees.
  • Melt butter in microwave.
  • Dip tortilla quarters in melted butter and place on cookie sheet.
  • Bake tortilla quarters for about 10 minutes (they should be done when the eggs are done).
  • Combine tomatoes, chili powder, green chilis, water, and pepper in a 10" frying pan.
  • Adjust seasonings to taste.
  • Bring mixture to a boil.
  • Reduce heat, and crack the eggs directly into the pan, in 4 separate places (12:00, 3:00, 6:00, and 9:00 works).
  • Cover pan and cook 3 minutes, or until the eggs are cooked how you like them.
  • Remove the eggs with a large spoon, scooping up the tomatoes under them, and serve with the tortillas.
