Pork Piccata

3/4 lb
pork tenderloin, sliced
1/2 cup
reduced fat mayonnaise, divided
1
garlic clove, pressed
1/4 cup
seasoned breadcrumbs
1 tbs
parmesan cheese, grated
1 tbs
butter
1 tbs
milk - 2%
2 tbs
capers
1 tsp
lemon juice


  • Pound pork to 1/4-inch thickness.
  • Add garlic to 1/4 cup of mayonnaise, and spread over pork.
  • Combine crumbs and cheese, and use to coat pork.
  • Melt butter in heavy saucepan over medium heat.
  • Add pork and cook until meat is no longer pink.
  • Combine remaining mayonnaise, milk, capers and lemon juice. Mix well. Serve with pork.
