Almond Brown Rice

1 cup
brown rice, long grain
2 cups
water
1
vegetable bouillon cube
2 tbs
slivered almonds
2 tbs
lemon peel, grated


  • In a medium-size saucepan, bring rice and water to a boil.
  • Add bouillion, stir to dissolve, and reduce heat to a simmer.
  • Cook 40 minutes until water is absorbed and rice is tender.
  • Stir in almonds and lemon zest.
  • Let stand a few minutes, then fluff with a fork.
