Lentils and Rice


Lentils
1 tbs
olive oil
1 cup
onion
1 tbs
fresh ginger, minced, peeled
1 tsp
cumin seed
1 tsp
turmeric
1/2 tsp
crushed red pepper flakes, crushed, careful add to taste
4
garlic cloves, minced
2 cups
cauliflower flowerettes, in bite sized pieces
2 cups
tomato, chopped
2 1/2 cups
water
1 cup
lentils
2 tbs
lime juice
3/4 tsp
salt

Rice
2 cups
brown basmati rice
4 cups
water

Lentils
  • Gently saute the onion, ginger, cumin, turmeric, crushed red pepper, and garlic over low heat in the olive oil.
  • Add cauliflower and tomato and stir to coat,
  • Add water and lentils; bring to a boil.
  • Cover, reduce heat, and simmer 35 minutes.
  • When lentils are tender, season to taste with lime juice and salt.
Rice
  • Cook rice as package directs for 6 cups of cooked rice.
