Creamy Mashed Potatoes

potatoes, diced
2 tbs
butter
1/2 cup
milk - skim
1/4 cup
plain low-fat yogurt
1/4 tsp
salt
1/8 tsp
pepper


  • Peel potatoes, if you don't like the skin.
  • Cook potatoes in boiling water for 20 minutes.
  • Drain well.
  • Mash potatoes with butter (coating the starch with fat first prevents the potatoes from getting gluey).
  • Stir in milk, and yogurt, then season to taste with salt and pepper
