Gluten is a composite of the proteins gliadin and glutenin. Gluten is primarily found in rye, wheat, and barley. Not all grains and cereals contain gluten because they do not have both gliadin
and glutenin. Oats do not contain gluten, but can be cross contaminated, so it's best to buy a brand that is certified "gluten free."
Gluten is not always an obvious ingredient. Food starch is common source of hidden gluten. Manufacturers often change the suppliers of their starch and will insist that the amount of gluten left in the product is "insignificant" however only you know how sensitive you are. Gluten is also processed and used as an inexpensive filler, texturizer and thickener. It can be found in surprising places like popsicles, deli meat, and envelopes.
