Wheat Free Wednesday 2/2/11

No-Wheat Happy Groundhog Day!   Today’s Gluten Free meal plan has 2022 calories (yes hungry people, we hear you).   This menu will be dairy, soy, and corn free with a tiny bit of tweaking/substitution – but probably not anything you don’t do already!

 

Breakfast


Pear and Maple Oatmeal with Turkey Bacon:  A great start to a wintery day1  The oatmeal is made rich and creamy by using soy/rice/almond milk in place of the water.   The addition of pear and maple makes it almost to good to stop eating.  Butterball Turkey Bacon boasts no soy or wheat – but some of the others aren’t allergen free, so watch those packages!

 

Lunch

Tomato Spinach Soup, Lemon Herb Quinoa, Hummus and Vegetables:  Plan on leftovers from this one!  You can add beans or vegetables to the quinoa leftovers to make a completely different dish the next day.  The soup comes together very quickly, but sometimes needs a pinch of sugar depending on the tomatoes.  This is filling but not heavy.

 

Dinner

 

Marinated Grilled Flank Steak, Lemon Garlic Spinach, Slowcooker Baked Potatoes:  Use whatever steak is on sale!  You can marinate this steak all day.  If you don’t have a wheat (or soy) free sauce we have a molasses and balsamic vinegar replacement recipe.  The butter in the Lemon Garlic Spinach can be eliminated with no real difference in taste.  Cook the spinach until it’s just wilted – it only takes a few minutes.   Using a slow cooker to make the potatoes is just an easy way to have them done when you are ready for them with no last minute fussing.

 

Fuel up – there’s lots of snow to move!
