Well, in keeping with the theme of cleaning out the pantry, I fed my family Taco Ranch Chicken, with a few modifications. I had pizza dough but not biscuits, not a major difference. The recipe called for tomatoes and onion and taco sauce, but for some reason we had 3 open jars of salsa in the 'fridge, so that was a nice substitution. It turned out rather well, with only one person objecting to the way the dough soaked up the liquid and so was wet on the underside. The substitutions gave me a chance to explain to the child who likes his spicy food spicy, that he can use the bottle of hot sauce (maybe we can get that finished) instead of opening countless jars of salsa looking for heat.
I also made a Thai Sesame Noodle Salad using some carrots and napa cabbage instead of the slaw called for, and adding a leftover breast of chicken for protein. This is good served warm or cold, and you can sneak veggies into it, too. I usually have all of the ingredients in the pantry, so it's a great make and take for summer potlucks.
The frozen pork was just turned into medallions (ooh, fancy!) grilled, and served with a salad, and some applesauce made by a favorite aunt that was languishing in the freezer.
