I’m looking out at snow, but I’m thinking about tornadoes and the fact that so many families are homeless. Although things can be replaced, it makes me think. What do I have, what can I share? How can I use the most of what we have so that I can give a little more?
Last week was a little crazy, so I have food leftover and there are fewer groceries to buy this week; I’ll donate what I would have spent.
Because it is snowing and I do not feel like going out – I’m going to make spaghetti and a salad.
Birthday boy’s choice – and he picked Pork Dumplings and Hidden Tofu Chocolate Pie for dessert. Yep, a kid requested a pie made out of tofu. He didn’t request broccoli, but I’m nice that way...
Teriyaki Tri-Tip, Potatoes Roasted with Garlic and Rosemary, and a salad with ginger dressing. The tri-tip will end up being whatever cut of beef is on sale. I have everything else.
Leftovers/graze night. Not only does this clean out the fridge, but it gives me a break!
Pork Roast with Caribbean Jerk Spices, applesauce, steamed cauliflower. I immediately slice any leftover pork for sandwiches and store it with the rest of my sandwich fixings. Instead of just packing away leftovers I make them lunch friendly - this cuts down on waste and makes it easier to pack lunches at 6:30 am!
Fried Chicken, mashed potatoes, ginger glazed carrots, corn. I’ll never learn. I was watching America’s Test Kitchen with my son over the weekend and they were making fried chicken. He loves fried chicken. I do not love frying. This recipe is half fried and half baked; he promised to clean!
