I think Spring has finally declared war on Winter. There may be battles ahead, but it’s coming. Even if the grass isn’t green, it seems like everything from beer to bread is! This week I am relying on quick family favorites and am only trying out one new recipe that I know from the get-go that I don’t have time to prepare as written. Ready?


Pork Dumplings Deconstructed, Sushi House Salad and Dressing. My kids love gyoza, but they take a lot of time. Serving the filling over rice is a delicious compromise!
Angel Hair Pasta with Italian Sausage and Herbs, Caesar Salad. For some reason my kids – even though they see me cook – think that this pasta recipe is really fancy. It’s not as easy as dumping a jar of sauce over pasta, but it is close. If you’re following a balanced diet the low fat sausage helps to keep you satisfied longer. I don’t use the anchovy in the salad dressing due to personal preferences (I just use the recipe editor and save my own version), and am finding more and more that making my own salad dressing is nicer than having a whole refrigerator shelf full of partially used salad dressings.
Mexican Stuffed Chicken Breasts, Spanish Rice, steamed broccoli. This is the recipe that I will be turning into a casserole – with the tortilla chips as a crust.
Beer Braised Corned Beef, Roasted Brussels Sprouts, Ginger Ale Glazed Carrots, and Dilled Boiled Potatoes. Pretty traditional St. Patrick’s Day meal at our house.
Leftovers or pizza – depending upon the plans of the teenagers.
Party Time! Celebrating my husband’s 50th birthday. He still hasn’t decided what food will make him happy.
The family celebration. We’ll be heading out to Monahan’s Seafood Market to pick out something fresh – and I’ll build a meal around it.
