Normally I plan meals with an eye towards recipes that members are asking me to test or tweak. However, that can lead to a $200/week grocery bill. I also buy gas on grocery shopping day, and, as you can imagine, it's not a happy feeling to spend that much money on consumables in less than 2 hours, so this week I planned meals with the sale flyer by my side.
Pork Spareribs are on sale for .99/lb, I'll use them to make Baby Back Ribs with Honey Mustard Peach Marinade (trust me, easier than it sounds!) and round that out with green beans and some potatoes and that's one meal.
Salmon is at a good price, too, so I'll buy one to freeze (thank you handi-vac), and Salmon Steaks with Fresh Salsa to grill. Asparagus and watermelon are also affordable; this will make a nice meal for the holiday weekend.
Although bagged salad isn't usually a great deal, when they're 2 for 1 it isnt' bad, so, with the chicken breast that is also on sale I can make Chicken Caesar Salad, which is my 12 year old's favorite Simple Chicken Caesar Salad (again).
Since the kids don't like portabella mushroom, I'll make Grilled Portobella Mushroom Burgers to mix up the monotony of sandwiches for myself and my husband. Deli meats are on sale, and they freeze very nicely.
I'm also going to grab some baking potatoes. One of my tricks to use up leftovers is to mound them into baked potatoes and sprinkle with a little cheese and chives or green onions.
Last but not least, I'll buy a cut of beef that is on sale and make our version of Bulgogi, one of my youngest son's favorite foods. The meal is easily completed with broccoli and rice.
Armed with my list and a solmen promise to NOT be lured by all the other stuff on sale, this week's trip should be a lot less painful!
