Today I want to tell you about one of my favorite appetizers/side dishes/desserts. Yes, Fruit Salsa with Cinnamon Tortilla Chips can fill all those slots, which is part of the reason I love it so… It’s something that is easy to bring, doesn’t require expensive ingredients, and will make you look like a star. Do you need further convincing? It’s low fat and has almost 3 grams of fiber per serving.
Have you ever found yourself with a few stray tortillas (not corn, but any gluten free is fine)? All you need to do is spray them with cooking spray, sprinkle on some cinnamon sugar, bake for 8 minutes or so, and you have your very own cinnamon chips. The recipe calls for brown sugar and white sugar and cinnamon. I don’t use the brown sugar just because of personal preference (and sticky mess on the pan if you don’t line it with foil or paper). Try it both ways.

This morning I was going to make a cake. I had 3 tablespoons of butter softened before accepting the fact that not only was I not in the mood to bake a cake, I was not in the mood to eat one. So, I melted the butter, poured in cinnamon sugar, tossed in tortilla wedges, and baked. While it was a little less messy than using the cooking spray (which I do in the sink, or the open dishwasher), I wouldn’t go out of my way to do it again.
So…chips were done. I watched them while getting ready to make the salsa. Not making the salsa, because getting distracted means burned chips (know thy oven).
When I say “salsa” here, I do not mean a traditional tomato/onion/jalapeno salsa that has been augmented with fruit. Instead, I mean “Oh look, I chopped up a bunch of fruit and used jam as a binder.” The recipe calls for apple, kiwi, strawberries, and blueberries. My family loves this version, but this is not for them; I'm going to be eating this and I prefer mango, raspberries, and nectarine. Pretty much any fruit will work. You just dice it and stir in some jam, (the recipe calls for adding some of the cinnamon sugar to the fruit, but I think that depends how sweet the fruit is) let it sit, et voila!
