Should I rename this blog ‘Confessions of a Reluctant Baker’? Because it sure seems like I’ve been baking a lot lately. Today I am making Chocolate Chip Pound Cake. The Banana Blueberry Coffee Cake is long gone. My oldest son (like his mom) does not really like fruit desserts, and so I felt the need to add chocolate to his life.
Still in pantry cleaning mode, I found a few partial bags of chocolate chips. You might ask how one can have a few partial bags of chocolate chips. Please don’t because I don’t have a good answer… I have plenty of butter and eggs, am running low on flour and sugar (surprise) and, well, that’s pretty much all you need for this recipe except for vanilla, baking powder, salt, and the aforementioned chocolate.
Before we go on…I have a disclaimer. This is not exactly diet friendly. My weekly menu is pretty full – I don’t have many calories to spare if I want to stay on track. I adjusted the exercise tracker until it came up with enough calories to offset one slice. It’s only 1 3/4 hours of walking 3 miles per hour… Good to know!
Step 1 is to thoroughly beat the butter and sugar. When I say thoroughly, I mean it. Go check your email or something…
Then add your eggs. The whole point of adding them one at a time is to ensure that they are fully incorporated. Next add those dry ingredients that were previously mixed together (wink/nudge). Of course you should not taste the batter, because raw eggs are not good for you. Selflessly, I did this for you before spreading the batter in the pan.
Now…bake!
Let it cool in the pan for 15 minutes, you don’t want it to burst apart. Then, remove from the pan and let cool. It takes forever. I hate waiting… See how I have my rack so elegantly elevated? I like to let maximum air around denser things so that condensation doesn’t collect under them and make the bottom soggy. No one likes a soggy bottom.
