Do you buy bananas only to have the last few hang out and turn brown, attracting no one but the fruit flies? Of course, you can put them in the freezer for later, but, you can also pull some blueberries out of the freezer and make an amazing Banana Blueberry Coffee Cake now. Like I just did:
I have made the recipe exactly as written many, many times, and it comes out perfectly. I have also made it…differently. This morning I had only 3 bananas, and wanted squares, so I baked it in a 9 x 13” pan. It was still lovely.
I love this cake. It’s easy, it’s tasty, it stays moist (can’t say how long, because it never lasts more than 2 days), and I usually have everything I need to make one.
If you use our Diet Planner, you’ll see that 1 very, very large piece fits into a diet quite easily. As a matter of fact, it’s a great breakfast:
If you use our Food Allergy Planner, you can use Bob’s Red Mill All Purpose GF Baking Flour to replace the all purpose flour – it’s a perfect one to one replacement here.
Add Banana Blueberry Coffee Cake to your meal plan and I’m sure it will go into your favorites!
