Well, with the dumping of the summer clothes bin in the middle of his floor, my youngest has declared that summer, for all practical purposes, has begun. What does this mean to my meal planning? Well, for one, weekday breakfasts are now all cold. They will consist of fruit and cereal that I will stand over him to eat because he is positive that the other kids are already outside playing before school. Lunches face the same challenge, only I can't be there to make sure he eats before going out to recess. So dinner is the big chance to make sure he gets his MDA (mother directed allowances).
It seems that everything has popped here at once, and the week nights are filled with meetings and activities. This week I have a request for Old Fashioned Matloaf (which will make for some nice lunch sandwiches for the adults), Salmon Steaks with Fresh Salsa, and chicken twice this week, once in Artichoke Chicken (company is coming), and once in schnitzel, just a fast cooking breaded chicken that satisfies the craving for chicken nuggets.
I left one day for leftovers, but I am pretty sure that something will come up and this menu will last me well into next week!
