Wheat Free Wednesday – May 11

Gluten Free Meal Planning at MealMixer

 

This is an actual poster from World War I.  It used to be patriotic to eat wheat free meals!  Considering the effects that the flood waters in the US and Canada are having on the wheat crops, it makes sense to be able to plan meals that do not include wheat, even if you don’t have to.  But, for those that DO have to avoid wheat, especially the newly diagnosed, we try to keep it simple, interesting, and affordable. 

 

GFCF Breakfast

Frozen Gluten Free Waffles, apples and almond butter.  I do read your emails, and if you say that something is tasty and safe, I’ll definitely include it in the recipe database!  However, the waffles aren’t chock full of nutrition, so they need healthy toppings instead of just syrup.

 

GFCF Lunch

Tomato Spinach Soup, baked brown rice chips, hummus.  The soup calls for only 5 ounces of spinach, but if you don’t want to save the rest of the spinach for a salad or sandwiches, just use it all.  If the soup seems a bit tart, add a teaspoon or so of sugar.   If you don’t have access to the brown rice tortillas for the chips, substitute corn tortillas, but add a little salt.

 

GFCF DINNER

Arroz Con Pollo, roasted sweet potato rounds, Mexican fruit salad.   Arroz con Pollo is one of my favorite one pot dinners.  You could leave out the beer, but it adds such great flavor that it’s worth it to search out a GF beer.  Anheuser-Busch Redbridge is a highly rated gluten free beer that shouldn’t be too hard to find.  The link will take you to a search-by-zip page.  The side dishes add color and fiber to the meal – it would be lovely to eat on the patio!

No-Wheat

Today’s Wheat Free Wednesday comes to you from Boyne City, Michigan.   There are gluten free products available here and the prices aren’t too high.  Not a lot of variety, but a few things – and many things that never had gluten to begin with but are now labeled “gluten free”…

 

Breakfast

Apple Breakfast Quinoa, and Sausage.  Quinoa makes a very hearty breakfast.  You need too cook it a bit longer than you normally would so the texture gets closer to porridge.  It’s super healthy.

 

Lunch

Hearty Vegetarian Chili and Corn Chips with Applesauce and Raspberries.  One of my family’s favorite ways to eat chili is to scoop it with corn chips.  Adding raspberries to applesauce adds a lot of fiber and interesting texture.

 

Dinner

Maple Mustard Pork Tenderloin, Garlic Quinoa, and Roasted Green Beans.    Pork tenderloin is probably my favorite cut of pork because it is so tender and takes so well to different flavors.  The green beans can share the oven with the pork, and, with a little careful planning, the quinoa can be shared between 2 meals.

Wheat Free Wednesday – 2/16/11

No-Wheat Today I’m inspired by sunny skies and warm-ish weather!  The snow is melting.  Today’s menu has just over 1200 calories, leaving plenty of room for seconds, snacks, and/or beverages.

Breakfast

Vegetable Hash, and bacon.   This is a great breakfast for those who aren’t really into sweet foods in the morning.  Former Ann Arborites need only add eggs, and feta and you’ll be transported right to the Fleetwood.

Lunch

Luncheon Stuffed Tomatoes and rice cakes.  The tomatoes are stuffed with a tuna salad flavored with pine nuts, herbs, and garlic.  Rice cakes add crunch without a lot of calories.

Dinner

Raspberry Glazed Chicken, Roasted Butternut Squash with Thyme, and Baked Asparagus with Thyme.  This meal is loaded with flavor – dare you not to go back for seconds!

You can add these, and other healthy recipes to your meal plan.
