Wheat Free Wednesday – May 11

Gluten Free Meal Planning at MealMixer

 

This is an actual poster from World War I.  It used to be patriotic to eat wheat free meals!  Considering the effects that the flood waters in the US and Canada are having on the wheat crops, it makes sense to be able to plan meals that do not include wheat, even if you don’t have to.  But, for those that DO have to avoid wheat, especially the newly diagnosed, we try to keep it simple, interesting, and affordable. 

 

GFCF Breakfast

Frozen Gluten Free Waffles, apples and almond butter.  I do read your emails, and if you say that something is tasty and safe, I’ll definitely include it in the recipe database!  However, the waffles aren’t chock full of nutrition, so they need healthy toppings instead of just syrup.

 

GFCF Lunch

Tomato Spinach Soup, baked brown rice chips, hummus.  The soup calls for only 5 ounces of spinach, but if you don’t want to save the rest of the spinach for a salad or sandwiches, just use it all.  If the soup seems a bit tart, add a teaspoon or so of sugar.   If you don’t have access to the brown rice tortillas for the chips, substitute corn tortillas, but add a little salt.

 

GFCF DINNER

Arroz Con Pollo, roasted sweet potato rounds, Mexican fruit salad.   Arroz con Pollo is one of my favorite one pot dinners.  You could leave out the beer, but it adds such great flavor that it’s worth it to search out a GF beer.  Anheuser-Busch Redbridge is a highly rated gluten free beer that shouldn’t be too hard to find.  The link will take you to a search-by-zip page.  The side dishes add color and fiber to the meal – it would be lovely to eat on the patio!

Happy Monday!   I hope everyone had a memorable Mother’s Day.  It’s back to work though…  This week I’ve pulled our dinners right out of my favorites.  When there is a recipe that my family has particularly enjoyed I make sure to add it to my favorites so that I can very easily create meals that everyone loves.  Some weeks I just need to get ‘er done!

Rate recipes for faster meal planning

Parmesan Sage Pork Chops, Buttery Red Potatoes with Chives, Carrot Coins.  My herb garden is already full of fresh herbs!  I will purchase whatever pork is on sale to use for this recipe, along with enough for later in the week.

Chicken Limone and Parmesan Orzo Primavera.  The boys do NOT like the vegetables mixed into their orzo, so I’ll sauté them separately. 

Lemony Marinated Flank Steak, Stuffed Baked Potatoes, Tossed Salad.  Definitely a meal for the guys.  I should probably check the level of gas in the grill’s tank.

Pork Dumplings Deconstructed, vegetable and fruit trays.   This is the recipe that will use the rest of the pork.  I have a meat grinder which I prefer to use over the food processor for this recipe.

Coney dogs, chips, and leftover fruit/veg from above.  This was a request.   In my humble opinion, the hot dog takes up too much space in the bun, so I cut it in half.  Just because a hot dog is high in quality does not mean it is low in fat – so this also counts as I diet tip…

The weekend has us out one day, and the other I’ll just pull out any leftovers and let everyone graze.

Wheat Free Wednesday – 3/2/11

sun The sun has started making regular appearances around these parts.  For some reason this makes my family less interested in sitting down to eat.  This only sets them up to grab (probably unhealthy) snacks, so I have to insist.  Planning a menu of tasty meals is essential to keeping my guys running.

 

No-Wheat

 

Breakfast

egg GFCF Breakfast Eggs and Kielbasa.  They may say they aren’t hungry, but they cannot resist the smell of sausage in the morning!  I never pick up a package of kielbasa/smoked sausage without reading the ingredients, even if it’s a brand I always buy.  If I have leftover potatoes I’ll sometimes add them to the pan to make breakfast even heartier. 

 

Lunch

avocado Botana, Tomato Guacamole, and grapes.  Sometimes I switch out the Fritos in the botana for tortilla chips (to save fat and calories) – especially if I have some on hand and don’t want them to go to waste.  This is an easily packable lunch if you have access to a microwave to warm the beans.

 

Dinner

salmon filet Salmon steaks with Fresh Salsa, Spicy Mustard Roasted Potatoes, Mixed Greens with Vinegar and Oil, Emerald City Salad.  Buy whatever fish is on sale – it’s the fresh salsa that makes this dish interesting.  The fish can share the oven with the potatoes if you aren’t ready for grilling season yet.  As far as “mixed greens” go, I always have romaine on hand, so I mix it with fresh spinach.  The Emerald City Salad is tasty, but definitely a splurge; a full 1/3 of my grocery bill was produce!
