Menu Planning for Cooking with Kids

My kids are home for spring break, and we're having a stay-cation, just doing fun things in our area with friends.   This means that they get a big say in what we eat this week, and also get to do a lot of cooking (they haven't yet figured out that this is reading and math practice).   You can check out the whole menu, but here are some of the highlights:

Youngest son has requested Chicken Noodle Soup. It's so easy to make good soup if you start with a good broth (I prefer our local store's organic version because it tastes like chicken, not salt).  This is ready in about 20 minutes.  I have slowly subbed whole wheat egg noodles in place of the white ones, and no one seems to mind.

We have filled up the propane tank and the grilling season has begun!  Oldest son loves Chicken Caesar Salad, and while I have made this recipe as written, this week we will be using a bottled light dressing and packaged croutons.

Philly Cheese Steak Sandwiches are easy to put together and leave in the fridge until you need them. I fry some peppers and onions for the adults to make the sandwiches spicier.  Since I plan to be out with the girls one night, the guys can bake these and have chips and fruit salad. This way I know they have a healthy meal.

This week we're also testing some member submitted recipes, a Roasted Tomato Beef Goulash with lots of spices, and a 3 ingredient Pineapple Angelfood cake.  I've seen the cake in magazines, and one of our members says it's good, so what the heck, we'll give it a try.
