Well... another busy week screaming at me. This week at school is teacher appreciation (something different every day), my sons have informed me that sandwiches for lunch are BORING and they need something "fresh", the big year-end school event meetings are ramping up, toss in various appointments and meetings, and top it off with going away with my DH away for the weekend and packing a romantic picnic for the way up north. I need a cup of coffee just thinking about it!
So while I give deep and serious consideration to boring school lunches, I'll whip up a Chicken and Pasta Caesar Salad for the teacher appreciation picnic, work on some interesting Kabobs for the picnic, and maybe make some Fudge Brownies to go with it.
Since to day is Cinco de Mayo we're having Pork Soft Tacos (the pork is roasting and I can smell the cumin!), fruit salsa with cinnamon chips (my kids love this), guacamole and tortilla chips (I'll just bake some plain/salted with the cinnamon ones) and Spanish Sangria (adults only!). I'm going to try out Penne with Roasted Asparagus, & Artichokes which I already know the boys will not eat, but I'll grab a jar of marinara sauce for them and they'll be happy with that and cheesy garlic bread.
Other interesting things this week: Grilled Lime Chicken with Stuffed Baked Potatoes and BLT Salad, and Kielbasa and Canellini Beans and Brussels Sprouts (my kids will actually eat them steamed with a teriyaki glaze).
If I don't post next Monday...please send coffee!
